how are the corner joints done .. the office max paper drawing are the only ways i can think of

That would be plenty. It would make it easy to slope them too!

The 2 current downspouts are about 2' back from corners edge. in the one picture its around 1 and 8...

i was thinking about leaving those and adding 2-3 more. and adding one between 2-3 and other between 6-7, then maybe one out by 5

Where are your downspouts? If they are in the corners, you would want to put the expansion joints in the middle of the sides and let the corner be the "pivot" point.

before i start with any work on house im trying understand expansion joints.

since the entire roof is hip. the logical place to put expansion joints would be on the corners.

the only example i can find of a corner expansion joint is :
